    苏州十碗面

    上有天堂,下有苏杭。而如今称之为人间天堂的苏州已基本上难觅小桥流水人家那种平和、安逸的水乡小城意境了,除了几处要收取高价门票的园林外,再就是苏州水乡风光残留之处的山塘街,依稀还能见老苏州的某些缩影。城市的大规模建设及城市的工业化使得今天的苏州失去了原有的风貌,平静的小城也成就了人和钱的世界.....苏州的吃也是一样!松鹤楼、得月楼...老字号的饭庄基本上属于旅游餐馆,贵而不精,杂而味异,体现不到真正苏帮菜的精华,然而苏州的面就我来说依稀感觉还能品到老苏州的特有风味,毕竟它曾有过中国六碗面之一的称号。

     <wbr> <wbr> <wbr> <wbr> <wbr> 苏州的面馆很多,遍布苏州的大街小巷,兰州拉面、奥灶面、台湾牛肉面、现炒浇头面.....真正有兴趣的还是苏州汤面。苏州的汤面有红汤白汤之分,面筋斗有嚼劲,汤重味香,咸鲜中带有甜味。端上桌只见鲜汤中面丝丝整齐相扣,几片青蒜漂浮面汤上(苏州面不用小葱,用青大蒜,有点红花要靠绿叶配的意思),散发出阵阵的蒜香、面香、汤香,天冷了再要上一小碟鲜姜丝,驱寒保暖,苏州人许多至今保留着早上吃汤面的习惯,特别是老苏州,还有一大早赶着吃头汤面的习惯(早上开店第一锅开水下的面条,很早哦,大概5点钟左右,所以基本上是老年人了。)至于面浇头,所有的苏州面馆基本上品种差不多,只不过是浇头的味之分别了。焖肉面,咸香肉酥、入口即化;焖蹄面,皮糯肉香,酱味浓郁;虾仁面,采用河虾去壳去头烧制;爆鳝面,采用鲜鳝划丝炸烹而成,脆脆酥酥甜甜咸咸;雪菜肉丝面,青雪里蕻咸菜炒肉丝,微甜微辣微咸;爆鱼面,十几斤的大青鱼开片油炸浸入特制好的料汤里而成,十足的苏州口味;还有就是香菇面、面筋面、素交面、辣酱面。苏州面馆无外乎也就是这些浇头加面了,本人最好口的是鱼肉双浇,焖肉加爆鱼,鱼肉双鲜呀!而最不喜欢的是辣酱,老苏州不吃辣的,所以辣酱是烧不好的。
